WINTER VEGGIE SOUP Serves 4-6 This is the perfect winter soup to warm your home and heart as we all enjoy the first days of winter. Kale and carrots can be found at the Farmers’ Market and parsley is a special herb that can be grown year-round in Arkansas. 1/2 c. onion, chopped 2 cloves garlic, minced 1/2 c. each of kale, carrots, red and green pepper (chopped) 1/2 tsp. salt 1/2 tsp. dried oregano 1/8 tsp. pepper 2 c. vegetable broth 1 16 oz. can diced tomatoes with juice 3/4 c. cooked beans, any kind 2 tsp. orzo pasta 2 tsp. dried instant barley 1 tbsp. fresh parsley, chopped Directions: In soup pot, sauté onion in 1 tbsp. olive oil over medium heat until soft. Add garlic and sauté 1 minute. Add kale, carrots, and pepper with the salt, oregano and pepper and sauté, turning heat to low, and cover with lid. Cook for 5 minutes stirring occasionally. Add broth, diced tomatoes, beans, barley, and pasta. Bring to a gentle boil, simmering for about 15 minutes. Add parsley and simmer for about 5 more minutes. Serve in soup bowls and enjoy!
