Kale Apple Salad
Kale (about 10 leaves)
1 sweet apple
¼ cup shredded parmesan
¼ cup of raisins
1 garlic clove, minced
½ teaspoon salt
few cracks of pepper
4-6 tablespoons balsamic vinegar
2 teaspoons honey
2 tablespoons Dijon mustard
½ cup extra virgin olive oil
Remove kale stems with fingers and place them in the compost.
Cut kale into thin ½ inch strips.
Cut apples into ½ inch chunks.
In a large mixing bowl, toss kale, apples, parmesan, and raisins together. Set aside.
Pour all dressing ingredients into a small jar.
Seal lid on the jar and shake vigorously to combine.
Pour your desired amount of dressing on top of the salad and gently toss.
