Dip into March with this easy and tasty St. Patrick's Day inspired hummus.
2 cups soaked or 1 can chickpeas, rinsed and drained
2 cloves garlic, peeled
3 cups baby spinach leaves
Juice of 1 small lemon
1/4 cup extra virgin olive oil
Kosher salt and fresh ground pepper, to taste
Put all ingredients in a food processor and blend until smooth. Add a teaspoon of water at a time to get desired consistency.
