Small Batch Garlic Dill Refrigerator Pickles (makes 1 half pint)
2 pickling cucumbers
1/4 cup apple cider vinegar
1/4 cup water
1/2 teaspoon pickling salt
1 garlic clove
1/2 teaspoon dill seed
4 black peppercorns
1/8 teaspoon crushed red pepper flake
1. Wash cucumbers and cut into spears.
2. In a small pot, combine vinegar, water and salt. Bring to a simmer.
3. Place spices and garlic clove into the bottom of the jar.
4. Pack cucumber spears into the jars.
5. Pour the brine into the jar, leaving ½ inch headspace.
6. Tap jars to remove air bubbles and adjust brine level, as needed.
7. Wipe rims and apply lids and rings.
8. Put jar into the refrigerator and let it sit for at least 24 hours before eating.
