Drawing on techniques and ingredients that echo the innovative spirit of NOMA (located in Copenhagen, Denmark and voted World's Best Restaurant five times), Chef Russell will craft an evening that balances earthiness with elegance, familiar warmth with surprising nuance. Each course he creates is meticulously planned yet unpretentious, a reflection of his curiosity, his appreciation for seasonal character, and his talent for transforming simple ideas into something quietly extraordinary.

Featured Chef - Chef Russell’s upbringing, nurtured by the flavors of farms and home cooking through three generations of his family, laid the foundation for his profound passion for food. Russell began his cooking career later in life, making a decisive step to channel his passion into professional kitchens, where he excelled through his unwavering drive to learn. With the support of seasoned leaders and access to a comprehensive library of Michelin-starred cookbooks, Russell embarked on an exciting journey of experimenting with novel flavors and techniques.

His extensive experience spans the spectrum from fine dining to "meat and threes" and has broadened his horizons, fostering creativity and further knowledge. Today, over 15 years into his culinary journey, Russell stands as the chef and owner of Dot’s Hot Chicken in Fayetteville, Arkansas, a restaurant that has been operational he started in 2017. At Dot's, Russell's culinary priorities are seamlessly integrated -- crafting menus from scratch, using fresh and locally sourced ingredients, and offering unique and truly delectable flavors.   

Alongside Dot's operations, Russell is a member of NOMA Taste Buds, an opportunity offered by the NOMA Projects Program food testing lab. Russell  was invited to Denmark to dine at NOMA and experience the testing lab and kitchen in person, and is currently delving deep into fermentation techniques and innovative ways to use the distinctive flavors derived from the lab. About the Kitchen Table Dinner Series Born out of a desire to build a community around great food, Apple Seeds' Kitchen Table Dinner series is designed to recreate the feeling of gathering around a dear friend's table. These dinners aim to bridge the gap often felt between the chef and diners in a typical dining environment, thereby creating a deeper connection to the food on the plate. Through intentional procurement of local, seasonal ingredients, the transparent preparation of the meal, and storytelling by the chef, each plate is transformed from food into an unforgettable dining experience.

These dinners are rain or shine.  All Kitchen Table Dinner series events are fundraisers with limited seating; we cannot offer refunds for tickets purchased.

Please arrive at 5:30pm for drinks and conversation. The dinner takes place in the Teaching Kitchen, located at the Apple Seeds Teaching Farm in Gulley Park, Fayetteville.

Parking is available in the Gulley Park parking lot off of Old Wire Road. From there it's a short walk north to the gates of the Apple Seeds Teaching Farm. For drop-offs only, the address is 2648 N. Old Wire Road. Please note that there is no parking available in the driveway.

Apple Seeds is an educational nonprofit based in Fayetteville, AR. Since 2007, Apple Seeds has provided over 110,000 students with a garden-based education, teaching them nutrition and culinary skills that excite them to eat healthy, fresh fruits and vegetables, positively shaping the healthy eating in our community. Student surveys show improved attitudes toward healthy food and heightened knowledge of nutrition concepts - things that help them make long-term healthy food choices.
