SOLD OUT! 7.12.25 Kitchen Table Dinner with Chef Nico Albert Williams
Join us for a meaningful Kitchen Table Dinner on Saturday, July 12th at 6:00pm featuring Chef Nico Albert Williams! This dinner will celebrate traditional Indigenous foodways, a sense of community, and connection to the land.
Chef Nico Albert Williams (ᏣᎳᎩᎯ ᎠᏰᎵ Cherokee Nation) brings a unique culinary perspective shaped by her deep commitment to Indigenous food sovereignty, wellness, and cultural revitalization. Her approach blends traditional Cherokee cooking with ingredients foraged, grown, and prepared in ways that honor ancestral knowledge while creating fresh, nourishing meals for the modern table.
This month’s dinner will highlight foraged edibles and unique ingredients of tribal lands. Expect a vibrant menu rooted in indigenous foodways, where meat is used thoughtfully as an accent rather than a centerpiece. We'll begin the evening with a traditional tea blend, setting the tone for a grounded and nourishing experience.
Enjoy a meal of bountiful plant-based dishes paired with grilled meats - like bison, turkey, or pheasant - sourced from tribal wild game on Osage Nation lands. Guests will enjoy dishes cooked over an open fire infused with plants from Apple Seeds' fresh summer harvest.
Featured Chef – As Founder and Executive Director of Burning Cedar Sovereign Wellness, an urban Indigenous community wellness center in Tulsa, OK, Chef Nico shares her passion through education, advocacy, and cuisine. Her work supports the re-establishment of ancestral foodways and holistic health practices in Native communities, an extension of her belief in food as medicine, culture, and story.
From growing and foraging to crafting dishes, as well as performing with her family’s metal band Medicine Horse, Chef Nico's work is guided by spirit, creativity, and a profound respect for land and heritage.
Her influence has been recognized by the Food Network, USA Today, Hulu, BBC, Cherokee Nation's OsiyoTV, Smithsonian Institute, King Arthur Baking Co, Atlas Obscura, PBS, PRX, the Gilcrease Museum, and others. She also serves as a culinary diplomat for the U.S. Department of State Arts Envoy program, representing North American Indigenous foodways at U.S. embassies around the world.
We can't wait for you to join us for this special evening under the stars, surrounded by the garden and nourished by food that connects us to generations past and future.

About the Kitchen Table Dinner Series - Born out of a desire to build a community around great food, Apple Seeds' Kitchen Table Dinner series is designed to recreate the feeling of gathering around a dear friend's table. These dinners aim to bridge the gap often felt between the chef and diners in a typical dining environment, thereby creating a deeper connection to the food on the plate. Through intentional procurement of local, seasonal ingredients, the transparent preparation of the meal, and storytelling by the chef, each plate is transformed from food into an unforgettable dining experience.
